Homemade Pickles

picklesI’ve been enjoying homemade pickles more and more, specially because they are made without preservatives and yellow dyes. It took me a few tries to find tune to my pickles but I finally got them to taste delicious.

To make tasty homemade pickles is very simple. You will need a mason jar or a glass container, cucumbers, or any other vegetable you might want to pickle (carrots and baby tomatoes are also great for pickling), onions, white distilled vinegar, salt, pepper, seeds and herbs.

My favorite homemade pickles recipes are:

Slice one cucumber and chop 1/4 of a white onion, place both ingredients in the mason jar. Add 3 pinches of salt, 1 pinch of black pepper, 7 tablespoons of vinegar if you are using a large mason jar, if using a smaller container add 4 tablespoons of vinegar only, fresh or dry basil and dill. Fill in the mason jar with filtered water, close the container and shake it well. Place it in the fridge. Let it sit for a few hours and shake it again. Enjoy your fresh homemade pickles the next day.

picklesSlice one large cucumber and place the slices in the mason jar. Add 3 pinches of salt, 1 pinch of black pepper, 7 tablespoons of vinegar and 1 tablespoon of mixed pickling spices. You can buy those at the store, they are a mix of mustard seed, black peppercorns, dill seed, chili pepper, ginger and many other seeds. Fill in the mason jar with filtered water, close the container and shake it well. Place it in the fridge and enjoy them the next day.

These pickles are perfect for sandwiches, wraps and snacks. They could be a thoughtful gift to a friend that is hosting a party, and could be easily added to a gift basket with crackers, cheese and wine.
