I just cooked the best pasta ever. Everything in this dish was extremely flavorful and perfectly balanced. When food finally achieves that stage, I get so much satisfaction out of it and permit myself to call it gourmet.
Zucchini Pasta Recipe
2 large zucchinis
2 large tomatoes
Salt and Black Pepper
How to make it: Shred the zucchinis in long strips. Start shredding the zucchinis from the very top of your shredder all the way to the very bottom, this way you will get long strips of ‘pasta’. In a fry pan, add 1 tablespoon of olive oil, let it heat in high heat. Once the oil is hot (not burning hot), add your zucchini stripes to it with 2 pinches of salt and pepper. Cook it in medium heat for about 6 minutes or until the strips start getting dry and there’s not much moisture/water in the pan.
On a separate saucepan, add 2 sliced tomatoes with 2 pinches of salt and pepper, 1 pinch of dry dill and 1/2 a tablespoon of olive oil. Cook it in low heat until the tomato melts and turns into a sauce.
Place the zucchini pasta in a plate and top it with your freshly made tomato sauce. Add Parmesan cheese if you like it.
