I got a few cooking books in my local library and there were a few recipes of granola in them, when I realized how easy it was to make my own granola I had to give it a try with the ingredients that I had on hand.
Here is the recipe:
2 cups of old fashioned rolled oats
1/2 cup of brown sugar
4 tablespoons of water
1 tablespoon of butter
1 handful of blueberries
1 tablespoon of honey
3 drops of vanilla (optional)
How to make it: In a saucepan mix the sugar, butter and 4 tablespoons of water until melted together. In a separate bowl add the oats, blueberries and chopped strawberries, then pour the melted sugar, honey and the vanilla on top of the oats and mix it until combined together.
Line a baking sheet with parchment paper. Spread the oats over it and bake them for 40-50 minutes or until dry at 325ºF. While baking it, mix the oats every once in a while using a spatula, this will help the granola bake more evenly.
Let it cool and store it in a mason jar or in a Pyrex container.
This granola is perfect with yogurt in the morning or over a fruit bowl. It’s also super delicious just by itself.
