I’m still in love with mini pies and since I’ve been craving them lately, I made a small batch of it today. Mini apple pies are super easy to make and it’s impossible to go wrong with them when entertaining, specially if served with vanilla ice cream.
Mini Apple Pie
1 pie crust from the supermarket or make your own if you know how
3 tablespoons of brown sugar or white sugar
1/2 tablespoon of corn starch
2 tablespoons of water
How to make it: Preheat oven at 425º. Use a mason jar lid to cut the crust into small rounds. Stretch the crust carefully and place them in greased muffin molds. Poke holes with a fork at the bottom of the crust and bake them for 7-8 minutes or until golden.
For the filling: Peel your apples and cut them into small pieces. Place the apple pieces in a cooking pan with 3 tablespoons of sugar and 2-3 tablespoons of water (add more water if necessary) and cook it over medium heat for about 6 minutes or until the apples are soft. Then add the corn starch and mix it until it’s no longer foaming. At this stage everything will become thicker. Your filling is ready.
Fill the pie crusts with it and refrigerate them for 2 hours before serving.
This recipe makes 10-12 mini pies.
