6 large carrots
Salt & pepper
White cheese or feta cheese
Fill a pan with water and cook the carrots until they are very soft. Add a pinch of salt in the boiling water.
Once the carrots are ready, place half of them in the blender with salt, pepper and a teaspoon of olive oil. I prefer setting some carrots aside to use them in case the consistency of my soup is too watery, I can always add more carrots to fix it.
Add 1/2 cup of water, using the same water that you used to cook the carrots. Blend for 1 minute or until it looks like a thick soup. Add more water until you get your desired consistency. Place the remaining carrots in the blender following the same process. Your soup is ready!
Serve it with white cheese in the center.
